Ingredients
1 C sugar
1/2 C butter
2-3 eggs* (original recipe calls for 2)
1 tsp vanilla
1.3 C shredded coconut
1.5 C flour
2-3 tsp baking powder* (original recipe calls for 3)
1 tsp cinnamon
1/2 tsp salt
1C chocolate chips
Preparation
Cream the sugar and butter.
Stir in the slightly beaten egg and vanilla mixture followed by the coconut.
Combine the dry ingredients and gently mix them into the batter.
Add the chocolate chips.
Spread evenly in a 9×13 inch pan and bake at 375 degrees untill lightly browned, around 18-22 minutes.
Cool and cut into 2″ squares.
*Sometimes two and sometimes 3? For a while I was overly sensitive to the taste of some brands of baking powder and so I modified the recipe, cutting back on the baking powder and adding an extra egg. Rumford’s doesn’t have the aftertaste, (luckily, I’m over it now anyway :-), so these days I’ve been going with 3 and 3 for that little extra lift!
